Creamy Chickpeas
Spain on a Fork’s creamy garlic and spinach chickpeas.
Ingredients

| 3 tbsp | Extra Virgin Olive Oil |
| 1 ea | Small Onion |
| 8 ea | Garlic Cloves |
| 2 tbsp | AP Flour |
| 1 tsp | Sweet Smoked Paprika |
| 1 tsp | Dried Oregano |
| 1 cup | Whole Milk |
| 1 cup | Broth (Veg, Chx, Bf) |
| 2 cans | Chickpeas (15.5 oz) |
| Handful | Chopped Spinach |
| 2 tbsp | Grated Cheese |
| 2 tsp | Lemon Juice |
Instructions
- Finely chop onion.
- Roughly chop garlic.
- Add olive oil to pan over medium heat.
- Add onion and garlic, stir continuously 3 minutes.
- Stir in flour, 1-2 minutes.
- Stir in paprika and oregano.
- Stir in milk and broth, 4-5 minutes.
- Drain, rinse, add chickpeas.
- Season with salt and black pepper.
- Simmer low heat, 10 minutes.
- Stir in spinach until lightly wilted.
- Stir in grated cheese and lemon juice.
