Creamy Chickpeas

Spain on a Fork’s creamy garlic and spinach chickpeas.

Ingredients

Amt. Ingr.
3 tbsp Extra Virgin Olive Oil
1 ea Small Onion
8 ea Garlic Cloves
2 tbsp AP Flour
1 tsp Sweet Smoked Paprika
1 tsp Dried Oregano
1 cup Whole Milk
1 cup Broth (Veg, Chx, Bf)
2 cans Chickpeas (15.5 oz)
Handful Chopped Spinach
2 tbsp Grated Cheese
2 tsp Lemon Juice

Instructions

  • Finely chop onion.
  • Roughly chop garlic.
  • Add olive oil to pan over medium heat.
  • Add onion and garlic, stir continuously 3 minutes.
  • Stir in flour, 1-2 minutes.
  • Stir in paprika and oregano.
  • Stir in milk and broth, 4-5 minutes.
  • Drain, rinse, add chickpeas.
  • Season with salt and black pepper.
  • Simmer low heat, 10 minutes.
  • Stir in spinach until lightly wilted.
  • Stir in grated cheese and lemon juice.
